It is sheer joy to make a cute little Santa Claus cake to celebrate the holidays. Cloaked in a red suit decorated with snowflakes, this beautiful Santa has a lot of detailed work. Anuya provides precise steps to help you make this wonderful creation in this tutorial.

Tutorial

1. Bake the required sponges in a bigger pan. Cut each sponge using 4 inch ring which will be used to build the body of the Santa Claus.

2. Attach the center dowel to the cake board. Layer the sponges on the cake board through the center dowel using ganache as the filling.

3. Mix the leftover sponge with ganache to make cake pop mixture. Use it to shape the top portion of the Santa’s body as shown in the picture.

4. Cover the outer surface of the cake with ganache and smooth it out. Let the ganache set for a few hours at room temperature.

5. Knead red fondant until smooth and pliable.

6. Roll out the red fondant to 2 mm thickness and wrap it around the cake.

7. Gently join the fondant on top and cut the overlap of fondant on the sides. Remove excess fondant and smooth out.

8. Use a round styrofoam that is the right size for the face of the santa. Cover the styrofoam using skin coloured fondant (You can knead white and orange coloured fondant to get skin colour)   

9. Smooth out the fondant over the body and the face of the Santa.

10. Insert the face of the Santa through the center dowel and place it gently over the body of the Santa. Secure it with edible glue.

11. Make the beard and moustache on the face using white fondant.

12. Place a round ball of skin coloured fondant above the moustache to make the nose of Santa. Keep the nose’s size relatively bigger than a usual nose.

13. To make the Santa’s cap, use red fondant and shape it into a cone and stick on top of the head. Use a strip of light green coloured fondant and cover the edge of the cap attached to the forehead of the Santa. Make the bonbon of the cap using white fondant.

14. Make sausages using red fondant for the hands of Santa. Make one side the hand narrow and pointy and attach that end over the shoulder. Use edible glue to secure them in place.

15. Make the eyes using small round black fondant. Shape a hand glove and attach to one of the hands and place a tree shaped gift in the other hand.  Decorate the dress using fondant snowflakes and lace as per your choice.
