Every year Elizabeth decorates her house for Christmas with a beautiful Crib depicting the Nativity of Baby Jesus and the Christmas tree. This year she wanted it to be different and that’s how the idea of edible moss wreath was born. She has always been fascinated with edible moss and wanted to give a new dimension to it. Here is a tutorial to make this edible moss wreath which is perfect to add to your Christmas cakes and cupcakes.

She loves to experiment different bakes and techniques in the pursuit of giving the best to her kids. Whilst on her pursuit to learn and develop new skills she came across Fondbites School of Sugar Art. Ever since her approach to baking and decoration has grown leaps and bounds. There is no looking back for her now.

Tools/Ingredients Required

  • 1 egg at room temperature.
  • 12gm Sugar
  • 30gm Honey
  • 5g Baking Powder 
  • 25g All Purpose flour (APF)
  • Any green food colours

Edible Moss

Step 1

Take a large Bowl. Add the egg and sugar to the bowl and whisk it using the electric whisk. Once the egg and sugar are combined well add honey and whisk again.

Step 2

Now sieve in the APF and the Baking powder into the mixture. Whisk again till everything is combined well.

Step 3

Add a few drops of any food colour of your choice and whisk again. Now the batter to be used is ready.

Step 4

Take any number of disposable glasses depending on the number of shades of sponge you desire to have. Pour some batter into a glass only until it’s half-filled and you can add few drops of the same or another shade of green to the batter in the bowl. This will let you create different shades of sponge from the same batter. Now pour the remaining batter into the other glasses as well and Microwave it for 50 seconds.

Step 5

The batter rises & comes up to the brim of the glass. You need to carefully get it out of the oven. Now it’s really hot and difficult to handle, so let it cool and come to room temperature. Once the sponge cools take a pair of scissors and cut the sides of the glass so that your able to peel the glass and get the sponge out. Once the glass is pealed you have a nice micro sponge ready to be used as an edible moss or the way you want.

Christmas Wreath

Step 1

Take a craft knife and cut the sponge to the desired thickness of the wreath.

Step 2

Once u have cut them take two circle cutters one big and one small.

Step 3

Cut the sponge using the big circle cutter.

Step 4

Now cut the centre using the smaller circle cutter.

Step 5

Use as many different colours of fondant as you desire to create accents to decorate the wreath.

Step 6

Here’s your cute little edible moss wreath all ready to go on your cakes or cupcakes.
