Plum Hazelnut Cake

Ingredients
For cake:
- All purpose flour – 100 gms
- Hazelnut meal – 50 gms
- Egg –2
- Coconut oil melted – 1/ cup
- Brown sugar/ cane sugar – 80 hm (use 100 gm if you want it sweeter)
- Baking powder – 1tsp
- Cinnamon powder – ½ tsp
- Cardamom powder – ¼ tsp
- Nutmeg powder – 1/8 tsp
- Vanilla extract – ½ tsp
- Crumbled cottage cheese – 75 gm
- Plum fruit cored and chopped – 200 gm
For crumble:
- Hazelnut meal – 70 gms
- Rolled Oats – 50 gm
- Brown sugar/ cane sugar – 50 gm
- Cinnamon powder – ½ tsp
- Butter – 30 gm (cold, cut into cubes)
Instructions
- For the crumble, combine hazelnut meal, rolled oats, sugar, cinnamon powder. Add butter, rub the flour and butter together to form a soft bread crumb consistency. Refrigerate this mixture till you work on preparing the cake batter.
- Prepare a 6 inch cake tin, grease and line it with parchment paper.
- Sieve together, all purpose flour, hazelnut meal, baking powder, cinnamon powder, cardamom powder and nutmeg powder.
- In a bowl whisk egg till its fluffy. Add coconut oil in slow stream while continuing to whisk.
- Add sugar gradually and continue to whisk.
- Add the flour mixture now. Mix till the flour is incorporated. Make sure to not overwhip.
- In the prepare cake tin, pour half of the cake batter.
- Over the batter, spread a layer of crumbled cottage cheese. On top it add half of the chopped plums. Over this sprinkle a layer of crumble mixture.
- Now pour in the remaining cake batter.
- Top it up with remaining chopped plums. Add another layer of crumble mixture.
- Bake in a pre-heated oven at 160 degree C for about 45 minutes or till skewer comes out clean.
